The dream of Valette Healdsburg began some 15 years ago amongst two brothers. Dustin Valette and Aaron Garzini were sitting at their father’s house overlooking the Alexander Valley, Aaron by this time was establishing himself at John Ash in Santa Rosa as a dynamic server and sommelier; Dustin was in New York learning the Culinary Craft that would be his life long passion.  Over a glass of wine the two dreamt of opening a restaurant that showcased all Sonoma County has to offer. This imaginary Restaurant would serve honest food, have impeccable service and house a collection of boutique, small production wines.  Now, with over 47 years of combined experience, Valette Healdsburg opens for the public to come and share the passion and dedication of these two brothers.



Chef Dustin Valette began his culinary career at thirteen washing dishes at Catelli’s in his home town of Geyserville, California. Two years later he took an apprenticeship at Chateau Souverain, a Francis Ford Coppola Estate where he worked under Executive Chef, Martin Courtman.  Now, more than twenty years later, Chef Valette finds himself back in Northern California’s wine country continuing the dream that started some twenty two years ago. 

Chef Valette honed his craft in some of the most celebrated restaurants on the West Coast, including the Michelin-starred Aqua in San Francisco, and Napa Valley’s Bouchon. Additional credits include Hokus at the Mandarin Oriental Hotel Honolulu, a five-star, five-diamond property; the exclusive North Ranch Country Club in Westlake Village, California; and VOX Restaurant & Wine Lounge in Henderson, Nevada.  For the past 6 years Chef Valette has been the Executive Chef of Dry Creek Kitchen, a Charlie Palmer restaurant in downtown Healdsburg. The Chef gathered great acclaim for the strong relationships he cultivated with local farmers and purveyors in order to provide the restaurant with the Sonoma County’s freshest and most unique  ingredients. Chef Valette was celebrated at Dry Creek Kitchen for his exceptional ability to pair some of the country’s best wines with his intense, flavorful, and dynamic cuisine.

Originally from Sonoma County, Chef Dustin Valette is a graduate of the Culinary Institute of America in Hyde Park, New York. He currently resides with his wife of six years, and their two dogs, in Downtown Healdsburg a block away from the Restaurant.

Aaron Garzini began his restaurant career at just fourteen years of age. His career began in the kitchen of Catelli’s, a beloved restaurant in his hometown of Geyserville, California. A few years later, Aaron’s brother, Dustin, would start his own culinary career in the kitchen of Catelli’s too. Those early years began a trajectory leading the two brothers back to their hometown with extensive experience and honed talents. While the experience sparked Dustin’s passion to become a chef, Aaron turned his hands to the Front of the House. 

For ten years Aaron refined his skills in the art of providing first class service at John Ash & Co., a pioneer in world-renowned wine country cuisine. 

Aaron decided to expand his leadership and service talents in the fast paced, high energy, hip San Francisco restaurant scene, gaining several years of invaluable experience at Betelnut Restaurant on Union Street. Aaron returned to Sonoma County as the restaurant manager at Rustic, Francis Ford Coppola’s restaurant at his winery in Geyserville, California. As the restaurant manager, Aaron led a team in providing warm, hospitable service, intended to welcome guests into the dining room as if welcoming them into their own home.

Opening a restaurant together is a dream come true for both brothers.  The combination of Chef Valette’s culinary acumen featuring fresh, local ingredients and Aaron’s savvy ability to provide a warm and authentic environment has brought these two local brothers full circle, back to the land they are from, and working together in the industry they love.
